Knitting in Uncertain Times

How to survive these times? 
I knit mittens: Honeybees and Chickens.
I cook nice dinners.
I walk the dog.
I listen to great podcasts that remind me of all the good humanity in the world.
I go to bookstores and buy novels and picture books, a lot.

Sorry for the weird post. 

Here's a recipe for: Pecan Pie
Crust: (also good for quiche or any pie)
1 1/2 cups flour
1/2 tsp salt
1/2 cup butter
4TBSP cold water.

Use a pastry cutter and mix flour, butter, and salt until crumbly. Add the water and form a big round dough ball. Roll flat with rolling pin on a floured counter, lay in pie pan. Trim edges if necessary and make the edges fancy with a fork.
Filling:
3 eggs
1/2 cup firmly packed brown sugar
1 cup light corn syrup (a little less is fine)
1/4 cup melted butter
1 tsp cinnamon (or 1 1/2 tsp)
1 tsp vanilla
2 cups broken Pecans, and whole ones for a design on top. (Note: the original recipe only called for 1 cup of Pecans).
Preheat oven to 375 degrees. Beat eggs, blend in the brown sugar, corn syrup, butter, cinnamon, salt, and vanilla, in that order. Add the Pecans - you could also use Walnuts and make this a Walnut Pie.
Pour the mixture into your gorgeous and unbaked pie shell. At this point you may make a design on top of the pie with whole Pecans to make the pie look impressive, but this isn't necessary, and sometimes these nuts on top get almost burned before the pie is done. Bake for 50 minutes or until the filling jiggles just a little when the dish is gently shaken.
NOTE: I put foil around the edges of the pie to keep them from getting too dark before the pie is done.
Cool on a rack for a couple of hours, or make this pie 1 day ahead to give the flavors a chance to really impress you. No need to refrigerate but you simply MUST serve with whipped cream!! Enjoy!

Heading West

I'm going on a camping trip with the family ~ from Maine to Yellowstone and back! 
I've been prepping for weeks. This is a tough time to leave gardens because the weeds will take over. It's a trade off and I'm willing to pay the price upon return.

When a Mainer goes to California in March

 

Earlier this month we went to California. 

Southern, coastal, California to be exact. 

No real sightseeing this trip, purely to visit family. Okay, we went whale watching and saw dolphins and whales. My sister is a marine biologist - who could resist a guided tour?

It was wonderful to see family, let's get that on record. Then, put this Mainer in Southern California while leaving the tail end of winter behind in the Northeast? I was in heaven! 

The plants. The gardens. The lizards - yes! 

The trees!!!

Love Is In The Air

Here's my first new card design for 2024. I'm calling it 'Love is in the Air'. This bear has the sweetest face and he was a lot of fun to paint. I do realize that he is holding the violin.... not correctly, but perhaps this is how bears hold violins? My apologies to any violin players out there.

It was 'Eggpiphany' here the other day! Our chickens started to lay! We got 2 beautiful blue-green eggs. The grandkids are coming up for the weekend. I can't wait to let them collect the eggs. It's the simple things.

Welcome 2024

 

Two years in a row we have missed being together for Christmas due to covid. (I will not make that a capital "c" even though my computer wants me to.) With grandchildren under the age of 5, it's tough not being together. We did Facetime. We will get together soon. I'm actually thinking of exchanging a gift before we do. I think a little pullover I got one of the kids is too small. I could just buy this little guy a box of crackers and he'd be content, he's the happiest little soul.

This 'new beginning' time of year is always one of reflection for me. I lost a painting I was working on (stay with me, there's a connection here). I can't stand to lose things, and I'm the 'family finder' when things get lost. Well, I searched my studio from 'top to bottom' and could not find this painting. To be clear, a visual: the painting was a 5" square birch wood panel, 3/4" deep. Not big. But when something is lost in my life, well it was like losing a billboard. This loss inspired a 'deep clean' of my studio, and THAT was the perfect 'new start' to my new year. I think I may start every new year this way. Sighting 'When In Doubt, Throw It Out' as I went, I worked my way through draws, files, boxes, under the couch, etc. Of course I did find the painting. The little booger slipped down behind a stand of drawers. It landed on the wall/floor molding, and so in not reaching the actual floor I didn't see it when I looked under the drawers. Sneaky, very sneaky. (This whole episode has changed my relationship with this painting and I find that fascinating, but now I am truly off topic). I'm happy and my studio is clean. Let this New Year begin!!
